The new wine is a very young wine. It can generally be marketed starting from the third week of November. Among the traditions linked to wine and peasant culture, one of the most important is certainly the feast of San Martino, which is celebrated on 11 November. "In San Martino every must becomes wine" is the proverb that accompanies the tasting of the new wine in this very circumstance. San Martino is also linked to the Thanksgiving Day at the end of the agricultural season. In general, the new wine is characterized by fruity scents, softness and harmony of taste. Normally, wines with very low tannic levels are obtained, immediately ready to drink, lacking the necessary structure for aging. It is therefore a mistake to confuse new wine with new wine: they are distinct products, because they are obtained with different winemaking techniques.
